When Volume 1 originally came out three cartoons had blackface jokes edited out: "The Truce Hurts", "The Milky Waif" and "The Little Orphan".
Volume 2's original release had the following cartoons with the modern redubbed voice for the Mammy character instead of the original soundtracks: "Saturday Evening Puss", "The Lonesome Mouse", "Nit-Witty Kitty" and "Polka Dot Puss".
Volume 3 has been covered already in this thread. Two cartoons are absent ("Casanova Cat" and "Mouse Cleaning"). "His Mouse Friday" has a slightly altered ending (zoomed in on Jerry to avoid showing the little cannibal), but soundtrack is intact. No replacement program has ever been available for Volume 3.
Replacement discs for the first two volumes were available through mail. The corrected discs have now made their way into copies available in stores in newer printings of those sets. However, there really isn't an easy way to tell if you are getting an "edited" or "corrected" copy, though. Earlier this year, I got a copy of Volume 2 from Wal-mart which had the correct soundtracks for all the cartoons. I have also noticed that the newer version of Vol. 1 no longer has the plastic "cel" slipcover over the cardboard case, so that may contain the corrected discs. Good luck!
